Happy Salad

Looks amazing. Tastes incredible. Happy Salad is easy to make and full of dense plant power. Great to make for a meal, and enjoy the left overs for a whole food lunch the following day.

Ingredients:

kale, 1 bunch chopped
1 cup cranberries, chopped
1-2 oranges, pith removed, segmented and chopped
2-4 Tb fresh ginger, grated
1/3 cup, sesame oil
1 cup sauerkraut, chopped
1 cup red rice
1/2-1 cup toasted pine nuts
salt and pepper to taste

Method:

Rinse 1 cup red rice well, and place in a saucepan with 2 cups filtered water. Bring to boil and reduce heat to simmer, covered, for 20-25 minutes, until all available water is absorbed. use a fork to gently fluff the rice and separate the grains when cooked. Set aside to cool before adding to other ingredients.
Place all ingredients in large bowl except ginger and sesame oil, and toss well.
Combine ginger and sesame oil together and pour over salad.
Serve with extra toasted pine nuts on top. Yum.
